Your first stop is Meghalaya, Northeast India, where the Khasi tribe dish up a legendary black sesame pork, Dohneiiong.
Next to the south-west coast, where cuisine from the Kerala Syrian Christians will delight. You'll be trying Ularthiyathu - a delicious dish of fried beef and coconut.
Following up is Dindigul Thalappakatti Biriyani from southern Indian state Tamil Nadu. This is a fabulous biriyani made with Jeerga Samba rice.
For desert, we'll go to Goa for some Baath: a coconut and semolina cake, and back up north to Manipur for Chak Hao Kheer - the forbidden black rice pudding, historically reserved for ancient Chinese royalty. Delicious, aromatic, creamy, and purple!
Can you feel your mouth watering? That's a sign.
