Today, 16 August, is officially 'Rum Day' so we didn’t need telling twice and rounded up the best places in the city to enjoy rum-fuelled cocktails. Rum has a rich history and an even richer future; sales are soaring and it may very well be on the way to becoming the nation’s next favourite tipple. Nostalgic, exotic and versatile, there are so many ways to use rum in mixology, so we are not only telling you where the nice places are to sit, but also what to sip there!

The Project at Quaglino's 

In a time where the word iconic is used all too frequently, there can be no other word used to describe Quaglino’s. Synonymous with style and glamour since being established in 1929, the restaurant and bar has been a bastion of the London scene for almost a century. Head-mixologist Federico Pasian's The Project cocktail captures the true essence of rum and the nostalgic notes that surround it - prepare to be transported from St James' to St Lucia whilst sipping Mount Gay Barbados rum infused with bananas and coffee beans, homemade allspice liqueur with apricot, lime and orgeat.
